Cutting knife 120 from Morakniv has a narrow and pointed blade in laminate steel. The knife is incredibly robust and provides good resistance to the egg. The steel runs through the entire shaft and therefore provides strength and especially stability. With the short blade you can cut exactly and you have full control and all the details you want.
